Travel By Glass: Loire Valley with Tori Haysom
NZSFW graduate Tori Haysom enrolled first as a cookery students and followed this by studying the Certificate of Professional 51·´²îºÚÁÏKnowledge. She is now the Auckland fine wine specialist for Dhall and Nash wines.
NZ Sommeliers and 51·´²îºÚÁÏProfessionals hosted Travel by Glass at NZSFW and Tori’s chose to feature wines from the 1000 kilometers of the Loire River.
- Vincent Careme Vouvray ACO 2018; Made from 50 year old Chenin Blanc vines, this wine offered delicate orange peel, ripe apple, beeswax aromas, off dry, moderate acidity.
- Alphonse Mellot La Moussiere Sancerre AOC 2020; Refreshing acidity, grapefruit, ripe pear, crushed summer grasses, full-bodied with suprising 14.5% abv.
- Domaine de Noire Caractere Chinon AOC 2016; Made from Cabernet Franc, ripe cranberries, plums, moderate acidity, light leafy character, black olives.
- Domaine des Pothiers Gamay St Romain 2019; From a small, lesser known appellation, Cote Roannaise AOC. This clone of Gamay Noir is found in a remote location of the central Loire Valley in the Auverne-Rhône-Alpes region. Aromas of ripe plums, soft tannins, balanced acidity, savoury spice, earthy, medium body.
Our students, under the guidance of Chef Finn, prepared a selection canapés to accompany the wines.
