INTRODUCTION

This programme develops essential skills for a future in hospitality, tourism, and cookery through a blend of practical training and industry knowledge. This programme concludes with a two week work placement, providing the opportunity to apply skills in a real workplace and build confidence.

Course Content

Module 1

Cooking & Baking

Students will gain a well-rounded introduction in preparing and cooking a diverse range of dishes. Such as classic salads, baked goods, egg dishes, and convenience pasta meals, alongside vegetable-based dishes and Asian-inspired cuisine. By the end of this module, participants will be able to produce well-presented, flavourful dishes with confidence, applying techniques that are relevant to both home cooking and entry-level professional kitchens.

Module 2

Tourism & Hospitality Products and Work placement

During the programme, you will have work placement for 2 weeks. This gives you invaluable hands-on experience in some of Auckland’s premier hospitatliy or tourism workplaces. Many students are offered full-time work at these businesses following their work experience module.

Module 3

Barista Skills

The Barista Intensive module will teach students how to operate and clean profressional coffee machines, and prepare and serve espresso based beverages. You will also learn about classic coffee styles, single-origin coffees, roasting styles, and working with milk and milk substitutes to make extraordinary coffees.

Module 4

Customer Service in Hospitality & Tourism

In this module, you will build a strong foundation of knowledge on hospiatlity and tourism businesses in New Zealand, while developing communication and service skills needed to confidently engage with customers and succeed in real workplace environments.

Module 5

Introduction to Standard Operating Procedures

Gain essential knowledge to work safely and responsibly in New Zealand’s hospitality industry. This module educates students on health & food safety, employment agreements, and the responsible service of alcohol, key skills for building confidence and professionalism on the job. 


Work Placement

During the programme, you will have work placement for 2 weeks. This gives you hands-on experience in some of Auckland’s hospitatlity & tourism roles.

Career Opportunities

Graduates will be able to work as waiters, cooks, front of desk & junior managerial roles in cafes, restaurants, catering businesses, bars, clubs, luxury resorts, hotels, superyachts and tourism business.
